Baxter Storey Attend A Chef Academy Day at Billingsgate Market
On the 18th of April 2024, Lockhart Catering Equipment supported the Baxter Storey and Robot Coupe Chef Academy Day at Billingsgate Seafood School. The day included a tour of the seafood market, a live hands-on demo on fish preparation by CJ Jackson, a food waste reduction workshop by Robot Coupe and a ready steady cook competition.
The day began with a tour of the seafood market, where an average of 25,000 tons of fish and fish products are sold through its merchants each year. The chefs had the opportunity to witness first-hand the impeccable freshness and quality of the wide array of species available, providing inspiration for exceptional dishes.
Next, was a live hands-on demo on fish preparation by CJ Jackson. The chefs were shown how to skillfully prepare fish quickly and efficiently and allowed them to hone their skills and learn new techniques.
In a commitment to minimizing food waste and promoting sustainability, the chefs then participated in a food waste workshop presented by Jamie Clews at Robot Coupe. This session shed light on innovative ways to utilize ingredients to their fullest potential, promoting even more responsible practices in the kitchen.
As the day drew to a close, the chefs embraced the 'ready, steady, cook' team challenge. Collaborating with a partner, they put their newly acquired skills and knowledge to the test, crafting a mouth-watering meal using the ingredients they had encountered and mastered throughout the day.
